Healthy Heavenly Blueberry Muffins
Blueberry Muffins are without a doubt an American breakfast staple. There is no denying that their soft delicate texture and sweet crumbly goodness is irresistible. However, a traditional muffin’s contents are not the best for your body; loaded with butter and unhealthy cooking oils, a typical blueberry muffin can reach up to 500 calories per serving. Good news to all you muffin lovers out there, I’ve been baking a healthier (and just as tasty) version of this delectable treat and am here to share it today!
Here is what you’ll need:
1 1/2 cups of organic whole wheat flour
1/2 cups white cane sugar
1/3 cup of almond oil OR applesauce
1/3 cup almond milk OR 2% milk
1/2 teaspoon salt
2 teaspoons baking powder
1-2 cups organic blueberries
Heat oven to 400 degrees. Start by combining all dry ingredients in a large mixing bowl. Whisk in milk, oil and egg until mixture is combined. Fold in the blueberries using rubber spatula or wooden spoon. Line tin with cupcake liners and use spoon to divide mixture into 8. Cook for 20 minutes, until golden brown. Enjoy, best when warm!
